In an effort to make sustainable practices more common in restaurants, executive chef Paul Fehribach of Big Jones is joining forces with Chef’s Collaborative to create Trash Fish Dinner. After an hour-long cocktail reception, enjoy an eight-course family style dinner, created by Fehribach and nine other Chicago premiere chefs (Erling Wu-Bower of Avec, Paul Kahan of Blackbird, and Michael and Patrick Sheerin of Trenchermen are just a few of the big names) and featuring lesser-known fish (think smelt, speckled trout and triggerfish) in each course. Provided by Fortune Fish and Gourmet, these sustainable fish, often known as “trash fish,” have traditionally been left off of menus and are often unknown to the public. No doubt Fehribach and his team change that with this innovative and delicious dinner.
