Ombré cakes in jewel tones are making white wedding confections look passé.

“I saw a pillow that had the same style of ombré band pattern and thought it would translate well onto a cake,” says Melody Brandon, pastry chef and co-owner of Sweet & Saucy Shop in Long Beach, explaining the source of her inspiration for this multilevel masterpiece. And this design is no anomaly: Brandon says she’s often influenced by home design objects and clothing. She created three tiers of smooth white fondant, then added one tier filled with pink ombré bands and an unexpected ribbon of turquoise for contrast. “I think it adds a new look to the ombré pattern,” says Brandon. For an added twist, she suggests handmade pink ranunculus sugar flowers to accent the cake’s top and the bottom corners of the tiers.
