Beth & Kevin

A last-minute switcheroo didn’t stop these longtime lovebirds from tying the knot in their Palm Beach dream venue.

Typically brides feel a sigh of relief when their invitations are mailed, but Beth Singer had reason to worry shortly thereafter: Two months before her wedding to Kevin Jacobs, she discovered her name wasn’t the only one about to change.

Though the couple had signed contracts with The Ritz-Carlton, Palm Beach nearly a year prior to their big day, a little birdie told them the venue was to be renamed Eau Palm Beach Resort & Spa. She says, “I went crazy when I found out.”

Panic truly set in when she began to wonder if the hotel planner they so adored had jumped ship—but Beth was relieved to learn that the planner, the hotel’s award-winning chef and 98 percent of the original staff were still in place. “They were very open about the whole process,” she says about the Eau team. “From the minute we walked in, it was first class.”

Fortunately for her, finding a mate wasn’t nearly as challenging. Beth and Kevin have known each other since fifth grade and became best friends in seventh grade. They attended the same high school in Davie, Fla., but never had a romantic relationship until they attended separate universities—Kevin’s in Colorado and Beth’s in Louisiana. They dated nearly five years before getting engaged. “She got me a trip to Costa Rica as a present for graduating law school,” Kevin recalls. It was there he proposed on bended knee.

The Fort Lauderdale-based couple dreamed of a very elegant, traditional wedding. And though both families were excited and eager to help, the busy bride—an internal medicine resident—called on Joni Scalzo, from Your Special Day by Joni, to help with the planning. “She was fantastic!” Beth says. “She kept me very calm.”

Soon, Beth was dress shopping, a task that seemed quite daunting until Camille Thiry Russler of Ever After in Coconut Grove, Fla., convinced her to try on a gold beaded Ulla-Maija gown that perfectly suited the gilded event theme. South Sea pearl earrings gifted by Kevin and designed by his mother paired perfectly.

The reception and ceremony were held in the Eau’s Grand Ballroom. Per the couple’s request, Dalsimer Atlas Floral and Event Decorators of Deerfield Beach, Fla., provided a tall, open chuppah so the pair wouldn’t be crowded amid the 15 friends and family comprising the bridal party. The same rabbi who performed Kevin’s bar mitzvah married the couple in front of 250 guests.

At the reception, the gilt theme continued via centerpieces of gold candelabras with tall candles, surrounded by peonies; hydrangeas; and ivory, champagne and blush roses. Dramatic lighting highlighted gold Chiavari chairs and sheer white drapery.

Beth changed into her second dress, a duchess satin mermaid gown designed by Mayda Cisneros, just before dinner. Eau’s award-winning chef turned out an impressive predinner spread comprising of Asian bites, a street-car station with mini grilled cheese and Reuben sandwiches, several passed hors d’oeuvres, and a shrimp and oyster bar festooned with ice carvings of the couples’ initials, before a supper that completely surpassed their expectations. A five-tier cake with alternating gold levels and a heady drape of sugar roses capped the meal.

Still buzzing from a sugar high, the remaining group moved to the hotel’s restaurant after the reception and kept dancing as they partook in sliders, french fries and ice cream, and complimented Kevin and Beth on their insanely successful event. Seems the couple pulled it off—despite the pre-wedding changeup—and got the happy ending they deserved.
