Maillard Tavern Chef Tony Priolo took home top prize at Chicago Gourmet’s Hamburger Hop.

Every year, both judges and guests at Hamburger Hop—the burger-based prelude to fall foodie fest Chicago Gourmet—taste test between-the-bun creations by the city’s best chefs to decide on two that reign supreme.

But on Sept. 28, for the first time in the event’s nine-year history, the judges and public came to the same conclusion, crowning Tony Priolo of Maillard Tavern winner of both the Buckhead Meat Chicago Hamburger Hop Award and the People’s Choice Award. His winning creation—judged on flavor, creativity and presentation—was inspired “by a classic dish called tournedos Rossini, which is named for the great opera composer Rossini,” Priolo says. “Classic Rossini is a beef filet on toasted bread, with seared foie gras and black truffles.”

His City Slicker burger, similarly, is comprised of 1946 Buckhead beef, black truffle pesto, foie gras mayo, seared foie gras and crispy Prosciutto di Parma. It all comes together deliciously on a locally baked Turano premium potato bun.

Selected by a panel of judges—including “Top Chef” alum Carla Hall and Chicago chefs John Hogan and Tony Mantuano—and more than 1,000 Hamburger Hop guests, the City Slicker ($24) is a menu mainstay at Priolo’s River West restaurant. If you stop by to get a taste, be sure to wash it down with a cold beer. As a pairing, “I love Moody Tongue’s Aperitif Pilsner, or the Lake Brothers Lager that we have on tap,” Priolo says.
