The Mandarin Oriental gets a new fine dining spot in The Aviary.

ASK THE CITY'S cognoscenti where they opt to unwind and the answer will likely be the Mandarin Oriental in Columbus Circle. Now, the plush hotel expands its luxurious wings with The Aviary, a Manhattan outpost of the cult-followed Chicago cocktail den. The 90-seat space perched atop the hotel’s tower offers a dizzying array of magical mixology and molecular gastronomy tricks sure to wow. Co-owners chef Grant Achatz and Nick Kokonas present an all-day food program with multicultural picks such as Thai pork belly with young coconut and banana curry, or the Achatz signature dish of ravioli filled with liquefied truffle. Cocktails pull inspiration from the city—the Wake and Bake features rye whiskey, coffee and orange-infused vermouth presented inside an everything bagel-scented bag. Or opt for the Science A.F.: a high-heat blended infusion of blueberry, lemon, honey, ginger and scotches that arrives bubbling with intrigue. 80 Columbus Circle
